Mac and Beans Medley

Ingredients

  • 4 garlic cloves
  • 1 bell pepper (any color)
  • 2 tablespoons oil
  • 1 can (14–15 oz) tomatoes
  • 1 can (15.5 oz) beans, drained and rinsed
  • 1 teaspoon red pepper flakes
  • 2 cups cooked macaroni or other pasta


Instructions

  1. Peel and chop garlic. Core, seed, and chop bell pepper.
  2. Heat oil in skillet over medium-high. Add garlic and pepper. Cook 1 minute (don’t brown garlic).
  3. Add undrained tomatoes and pepper flakes.
  4. Cover and cook 10 minutes on low heat until sauce thickens slightly.
  5. Add beans and cooked pasta. Cook 5 more minutes or until heated through.
  6. Serve hot.
